Our dearly loved wife, mother, daughter, sister, aunt, friend, Katelin Rose “Katie” Nielsen Rose, 35 years old, passed from this life to the next on June 17, 2025, after a valiant two-year battle with breast cancer. Our world will never be as bright without her shining light.
Katie was born on June 13, 1990, in Ogden, Utah to Curtis and Kristie Wallin Nielsen. She joined three older sisters; Heather, Amanda, and Sarah, to complete the family of six. She lived in Ogden next door to her grandparents, Monty and Rose Nielsen, for her first eight years of life. She attended Hillcrest Elementary School like her sisters before her. Katie had a double dose of energy; she never stopped moving whether awake or asleep. Sitting still in school, church, or anywhere else was a challenge for her and her teachers. She loved any activities that were physical and outdoors.
The family moved to West Haven after Katie turned eight years old. She quickly made new lifelong friends as she attended Kanesville Elementary School, Rocky Mountain Junior High School, and Fremont High School. She excelled in playing volleyball and soccer for school teams and competition leagues. She also loved dance and art classes. Katie graduated from Two Rivers High School in 2008.
She soon met her first love, Xavier Mendoza, the father of her amazing son Ryker Evan Mendoza, born in December 2009. The couple later separated, and Katie’s full focus turned to raising Ryker. As a single mom, she completed training and then worked as a pharmacy technician while attending Weber State University where she graduated with her bachelor's degree in professional sales. She was an executive sales representative for Optum Business in a career, workplace and with co-workers she loved.
In 2017, Katie reconnected with a high school friend and the love of her life, Spencer Rose, who has two children, Boston and Patrick. They married in April 2019 and united to form a beautiful family of five. She was a devoted wife and mother to her family. Katie and Spencer lived in Syracuse for five years and the last year in West Haven raising their family and living life to the fullest. Their home was often filled with family and friends, food and fun, and always with laughter and love.
Katie never slowed down from that hyper young girl. She worked hard, and then she played hard at enjoying every minute of life. She made everything fun and special, and she made everyone feel welcome. She was a talented decorator, dancer, and artist. She was a competitive, skilled athlete. She was a beautiful, kind, loving person who brought that overflowing energy and enthusiasm to everything she did, everywhere she went, and everyone she knew. Katie truly exemplified a life motto of “carpe diem,” sieze the day. May we all follow her great example to love and live life to the fullest making the most of our time and blessings from Heaven.
Katie was a member of the Church of Jesus Christ of Latter-Day Saints. She was a loving and spiritual person who always tried to treat others kindly and with respect. Katie is survived by her husband and parents; her children, Ryker Mendoza, Boston Rose, and Patrick Rose; her sisters Heather (Matthew) Wright, Amanda Nielsen Johnson, and Sarah (Stephen) Melson; and her grandparents F. Monty and Rosalee Nielsen. She is also survived by her father and mother-in-law, Kevin and Darlene Rose; and her brothers-in-law, Brock (Christy) Rose, and Jared (Rene) Rose. She will be greatly missed by her many nieces and nephews who have loved their Aunt Katie, as well as her many aunts, uncles, cousins, and a multitude of friends whom she loved and loved her.
Katie was preceded in death by her grandparents June Wallin, and Robert and Barbara Wallin.
The viewing will be held on Tuesday, June 24, 2025 at the Lindquist’s Roy Mortuary, 3333 W 5600 S, from 6 to 8 p.m. and on Wednesday, June 25 from 9:30 to 10:30 a.m. at the Church of Jesus Christ of Latter-day Saints chapel at 4555 W 4000 S in West Haven, Utah. The funeral service will be held at the same chapel on Wednesday morning at 11 a.m. Interment will be at the Lindquist Washington Heights Memorial Park at 4500 Washington Boulevard, Ogden, Utah following the funeral.
The family would like to thank the amazing nurses, doctors and staff at Huntsman Cancer Institute and Hospital for their skilled and dedicated physical and emotional care to Katie and her family throughout her cancer treatment. The family encourages support to breast cancer research organizations including the Breast Cancer Research Foundation (BCRF), National Breast Cancer Foundation (NBCF), or the Huntsman Cancer Foundation if you wish to do so in Katie’s honor.
