Karen Elaine Engberg Daffin

Karen Elaine Engberg Daffin passed away on January 2, 2025 in Layton, Utah, She was born on Nov. 10, 1949 in Logan, Utah to Charles and Evelyn Engberg and was a graduate of Ben Lomond High School, class of 1968.

 Karen was a natural born artist at heart, and her artistic mind was reflected in many aspects of her life, including cooking, experimenting while preserving and practicing cooking traditions passed down from her parents. Her tomato juice was the best. She loved holidays and she always carved the most interesting pumpkins at Halloween, artistically decorated trees at Christmas, and at Easter, her whimsically dyed eggs were sometimes beautiful and other times crazy. She spent endless hours creating art, often incorporating Celtic design which she gifted to friends and family. She loved Celtic music, traditions and art and loved to explore unfamiliar roads to see where they led. For Karen, the road traveled was more important than the destination.

 Karen was passionate about caring for nature and the environment and she was able to magically make plants grow and flowers bloom, a talent inherited from her parents. And her love of animals knew no bounds, having rescued and cared for countless dogs and cats throughout her life.

 Karen was preceded in death by her parents, her former husband, Walt Daffin and her nephew Andrew Engberg. She is missed more than can be imagined by sisters Julie Engberg and Kris Naser, brother Greg Engberg, daughter Robbin Daffin, and nieces Andrea Jaramillo and Erin Kitlinger.

 Her family is planning a private celebration of Karen’s life at a later date.
