Carol Westover Parkin 80, passed away peacefully Thursday, September 14, 2023, at her home surrounded by her family. She was born December 25, 1942, in Yuma, Arizona, the daughter of Donald Erickson Westover and Louise Solomon. She grew up in Yuma, Arizona and raised her family in Glendale, California. She later moved to Utah and lived in Park City and Layton.
On June 27, 1964, Carol married the love of her life, David Stanley Parkin in the Mesa Arizona Temple.
Carol graduated with a degree in Elementary Education from Brigham Young University in 1964 and was honored as the “The Most Outstanding Woman Student in the College of Education” that year. She was an elementary school teacher for four years in Utah after graduating. Her first two children were born in Utah during that time. Later, after moving to California, she stayed at home full-time with her children. During that time, five more children joined the family. Carol believed so much in each of her children and was their biggest cheerleader. She was always there to celebrate their successes and joys and was a shoulder to cry on during times of difficulty. That same love and devotion spilled over into her role as grandmother.
She was a faithful member of The Church of Jesus Christ of Latter-day Saints and served in various callings including Relief Society president, Young Women president, Primary president, full time missionary in Raleigh, North Carolina at age 77, temple worker, and others.
Carol was very community-minded and served in various capacities. She was PTA president, cub scout leader, classroom volunteer, and member of the National Charity League. She opened her home to everyone, including several friends and family members that needed a place to live during times of need. She sincerely loved everyone she ever met, and genuinely was a friend to all.
Carol enjoyed traveling, reading, gardening, singing and music, painting, collecting antiques, and family history. She has been blessed to travel to many places all over the world, making friends all along the way. Most of all, she loved people: serving others and being with her loved ones.
She was preceded in death by her eternal sweetheart David, her parents, her siblings: Joan Mooney and James Westover, as well as her brothers-in-law: James Mooney and Clyde Christensen. Carol is survived by her seven children: Shawn (Vonnie), Tausha, Trenton (Lisa), Jason (Heidi), Jeremy (Miriam), Maren (Aaron Lewis), Jonathan (Casey Anne). She is also survived by thirty-five grandchildren, seven great-grandchildren (and growing), her siblings: Nancy Christensen, Bruce (Vicki) Westover, and sister-in-law DeAnn Westover.
Funeral Services will be held Saturday September 23, 2023, at 11:00 a.m. at the Canyon Woods Ward, 1085 N. 50 E., Kaysville, Utah. Friends may visit with family Friday September 22, 2023 at the Lindquist’s Layton Mortuary and Saturday from 9:30-10:30 at the church.
Interment at Bountiful City Cemetery.
